This Mexican is a little fuller-bodied than most, with lower acidity, and just a hint of citrus at lighter roasts. There are hints of semi-sweet nutty & chocolate tones. This is a lovely daily drinker. Lighter roasts accentuate some floral and sweeter tones but can risk a little herbal note if too close to 1st crack (light). Medium to just before 2nd crack (Dark to Med. dark) will produce smooth defined and balanced cups. Darker roasts get edgy and strong with smoky, nutty, and bakers chocolate tones.
Recommended Roasts: Light to Dark-medium
